For March’s Food of the Month, Head Start students learned about protein-packed beans. The students began the day learning interesting facts about beans and their importance in a balanced and nutritious diet. Beans are part of the legume family and are an excellent low-fat meat alternative that provides protein, fiber, B vitamins and iron.
Head Start students also learned about gardening through story time from books like Farmer Duck and Growing a Seed. Teachers then discussed the various ways plants grow with their class. GBCA’s Head Start center on Nelson Avenue in Jersey City participated in a gardening activity where they planted their own bean plants. After planting the beans, they placed the pots on the windowsill so that they could watch them grow throughout out the school year. As a final component to Bean Day, the students were able to taste hummus made from garbanzo beans.
